Mận máu là giống mận cổ quý thuộc huyện Hoàng Su Phì, tỉnh Hà Giang; độ thơm và chát đặc biệt so với mận tam hoa, mận hậu ở Sơn La. Mận máu là tên của chính người dân bản địa đặt cho giống mận này do khi cắt quả có màu đỏ sậm, ngọt chắc, ít chua, màu mận đỏ tía. Năm 2021, Mận máu Hoàng Su Phì đạt chuẩn OCOP 4 sao.

Những quả mận sạch được thu hái trong thời gian mùa rất ngắn, ủ với rượu chưng cất theo công thức đặc biệt để tạo nên sự kết hợp hoàn hảo của vị chát, chua cùng ngọt dịu .

Rượu mận máu có độ chát rất giống rượu vang từ nho đỏ, phù hợp với các loại thịt đỏ, món nướng, lẩu.
Trước khi ăn để 10’ trong ngăn mát tủ lạnh, không để lạnh sâu. Uống chậm một ngụm to tròn trong khoang miệng để thưởng thức vị mận tươi chua, ngọt dịu, chát trọn vẹn.

Blood plum is a precious variety of plum native to Hoang Su Phi district, Ha Giang province; it boasts a unique aroma and bitterness compared to the Tam Hoa plum or the Hau plum in Son La. "Blood plum" is the name given by the local people to this plum variety because when cut, the fruit has a deep red color, sweet and firm, with little acidity, reminiscent of the color of dark red plums. In 2021, Hoang Su Phi Blood Plum achieved a 4-star OCOP standard.

These clean plums are harvested within a very short season, then fermented with distilled liquor according to a special formula to create the perfect combination of bitterness, acidity, and sweetness.

Blood plum liquor has a bitterness very similar to red wine from red grapes, making it suitable for red meats, grilled dishes, and hot pots. Before drinking, let it sit in the refrigerator for 10 minutes, not in the freezer. Sip slowly to savor the fresh, tart, sweet, and fully bitter taste of the plum.
